Bon Appetit featured a school garden in New York in their September 2014 issue. They had a few chefs come in and make some of these recipes with the kids at the school. According to the article the kids devoured all of these. Since they seemed kid-friendly in the prep and are heavy with zucchini, green beans, arugula, etc. I thought I would share:
Green bean and buttermilk salad with tomato dressing. They used a hotplate for this one which we have at the school.
Zucchini Patties with Roasted Red Pepper Labneh (super easy to make the Labneh ingredient instead of buying it- need a skillet which we also have at the school)
Or this Zucchini Patties with Feta recipe I hear is amazing.
We use arugula instead of basil for this Pesto
